When Joseph arranged for Egyptian feudalism he did it with the consent of the Egyptian people. Injustice was achieved through voluntary means. Consent does not always guarantee righteous outcomes. Consent gets you close to fairness but not at all necessarily to deservedness, which is why consent does not guarantee justice.
That rabbinic authority has the consent of the members of observant Judaism does not mean rabbis deserve the authority they have taken for themselves. Just because, as posed, the alternative is worse than the selected choice does not make the decision right even if the decision was taken with the consent of all parties.
